Ripassa is the name that Zenato gave to this uniques wine which is similiar to our Amorone. Immediately after the fermentation of Amorone grapes, we add the best selection of Valpolicella wine to the lees, thus beginning the second alcoholic fermentation; the alcohol content increases and the wine becomes richer in colour, essences and fragrances. After 6 months of refinement in bottle we release this wine. Ripassa is extremely long and soft with a strong scent of little red fruits This wine is one of the most representative wines or our estate. Amorone is the flagship of our production. This wine gets its origin from the selection of the best Valpolicella Classica grapes, (Corvina, Rondinella and Sangiovese), harvested in the communes of Sant' Ambrogio, Negrar, Pedemonte, Fumane, San Pietro in Cariano and Marano. After the harvest in small 2,5 Kg. boxes, the grapes are put on to racks in a dry and well ventilated location, for 4 months. The pression of the grapes begins only in january, and is followed by a slow fermentation on the skins and finally the refinement for 30 months in 3 hl, french barriques and Slavonia oak barrels. The wine is ready for consumption onlu after and additional year in bottle. Amorone exhibits a great richness and a majestic taste. Excellent harmony, among other elements, make the Amorone wine suitable for a long ageing. Resulting from genuine passion, this Lugana Riserva is the result of our family's history The grape is produced in the vineyards of "Podere Massoni", where the vines are between 15 and 20 years old. Standard production is very low, that is 2,5 Kg. per vine; the harvest is late and occurs in the middle of october. Vinification is overseen in the greatest care in every phase: fermentation is carried out in barriques. The wine is then the aged in little new barrels for 4 months followed by 6 months in stainless steel tanks and 6 months in bottle. After this period the wine is ready to leave the cellar. Light gold in colour with brilliant reflections and a rich fragrance with fine aromas of citrus ffruits and vanilla. The full, rich flavors are balanced by the persisten aromas. This wine can be aged for several years too.
